I'm having two difficulties:
1. I can't figure out how to PREVIEW the quiz as I do with the classic quizzes.
2. These new quizzes do not show up when I try to import them into a second Canvas shell.

Hi, Patrick:
I have to research your second question, but here is how to PREVIEW a quiz in New Quizzes:
1. Click on the 3 dots / options to the far right of a New Quiz.
2. Click the Build link.
3. Click on the Preview button.
(note that if you are currently editing the quiz, you can't open Quiz Preview).

P.S. You are not the only one who has had issues with New Quizzes quiz not copying via course imiport. Perhaps this is still a problematic function. For some, it appears to simply take a long time to process; for others, it doesn't work.

I can follow the instructions and even receive this message:
COPY OPERATION STARTED SUCCESSFULLY
However, an hour later, I still see nothing copied in the destination course.
No big deal, Vivie... I can copy manually in this instance.
