is there a reason that scheduled zoom meeting do not show up on the calendar or in the student's to do list?
I have to manually add them to the calendar, so the students see them. I do post announcements, but many students rely on the to do list and calendar.

My guess is because ConferZoom is an outside tool that is integrated into Canvas -- not a native Canvas tool such as Assignments or Quizzes.  As a workaround, I would remind your students of your scheduled ConferZoom meetings via regular class announcements or even make a more prominent link to ConferZoom on your course homepage with text that says something like, "Zoom meetings, every MWF at 10:00" - or - "Zoom meeting this Wednesday 5/13 at 2:00!" 

Hope this helps.  Others here may have different ideas.
